1 Lb.

Turkey breast, skinless, cut into 1 inch strips

1/2 Teaspoon

Kosher salt

1/4 Teaspoon

Granulated garlic

1/8 Teaspoon

Ground white pepper

1 Cup

Onions, chopped

Chicken stock, low salt

2 Cups

Water

Tomatoes, diced no salt

1 Tablespoon

Tomato paste, no salt

1 Tablespoon

Jalapeno peppers, chopped

1 Tablespoon

Oven roux flour

 

 

- Spray a 4 quart pot with nonstick vegetable cooking spray & place over medium heat.

- Add the turkey, salt, garlic & white pepper.  Cook for 5 minutes or until the turkey loses its color, stirring constantly to prevent burning.

- Add the onions & cook 10 minutes, stirring frequently.

- Mix the chicken stock with water. 

- Add 1/2 cup of the stock mixture, the tomatoes, tomato paste, jalapenos, roux flour & remaining stock mixing after each addition.

- Reduce heat to simmer, cover & cook for 15 minutes.
