Blueberries and Cream Pie

Every year, people bring me blueberries or strawberries from the plentiful crop that the Louisiana climate gives us. I usually get so many, that I start to turn them away! After many attempts to master a recipe for these beautiful berries, I came up with this one. I prefer blueberries over strawberries, but either one is good. This is a quick version of a sugar free blueberry cheese cake that is very easy to make at home. My kids do not even know that it is sugar free! Enjoy!

Learning to Live with Diabetes

Being diagnosed with Type 1 diabetes as a child was a blessing in a way. I had a loving mother who learned everything about preparing diabetes meals. She learned how to prepare meals that were healthy yet tasty to a teenager’s palate. I came to appreciate my mother’s efforts when I left the house and starting preparing my own meals. It was then I realized the difficulty of adapting recipes and meals for a diabetic’s needs. My transition was easier than most because I could simply mimic my mother’s cooking and meal plans. Thankfully, my training as a chef gave me a solid knowledge base of food and nutrition that allows me to readily prepare tasty meals that are also health-appropriate for diabetics.

Delicious Seasonal Pear Salad

This is one of my favorite spring salads, and based off a salad my mother served us as children. It is a delicious pear salad, with fresh, seasonal greens and a light cranberry vinaigrette that will make your taste buds sing!

As a person living with Type 1 Diabetes, I know the importance of eating right. We must be very careful of what we eat, and counting carbohydrates is essential to taking enough insulin to keep our blood sugar in the proper range.
